Cuantas ganas tenía de unas jacket potatoes, una receta deliciosa y facilísima típica de la cocina inglesa que consiste en hornear las patatas con piel (jacket = chaqueta) y rellenarlas.

Ingredientes:
4 patatas grandes
Mantequilla
Pimienta y sal
Ingredientes para los 3 rellenos que preparé (Cantidades y variaciones al gusto):
Carne mechada con chile:
Carne guisada
Cebolla, pimiento y tomate
Sal y Chile
Apache pizza "Cheesy Garlic Chips" :
4 quesos preferidos (Cabra, mozzarella...)
Ali oli
Orégano
1 Cebolla
2 cucharadas de harina
Aceite
Ensalada de salmón y aguacate:
Salmón ahumado
1 aguacate
1 tomate
Aceitunas verdes
Salsa rosa
Semillas de sésamo
Sal

Preparación:
Precalentamos el horno a 180 C.
Lavamos bien las patatas ya que vamos a cocinarlas con la piel.
Las untamos de mantequilla y para no tener que hornearlas durante dos horas las introducimos 20 minutos en el microondas.

Las sacamos y con mucho cuidado hacemos unos cortes de aprox. 2 cm de profundidad en forma de cruz, volvemos a untar con mantequilla, añadimos pimienta y sal y horneamos 30 minutos.
Guisamos la carne o utilizamos sobras de carne guisada para realizar la carne mechada. Este relleno inspirado en la cocina mexicana es característico por deshacer la carne con dos tenedores en lugar de picarla.
Hacemos una salsa de tomate friendo y triturando la cebolla el pimiento y el tomate y añadimos sal y chile al gusto.

Uno de mis restaurantes preferidos cuando estuve en Irlanda era el Apache pizza de Cork, me encantaban las patatas fritas con alioli y queso, desde entonces hago muchas veces mi versión de esta combinación en casa. Para las jacket potatoes mezclé el ali oli con los quesos fundidos y preparé cebolla crujiente estilo americano.
Picamos la cebolla y la pasamos por harina. Con ayuda de un colador quitamos el exceso de harina y freímos en aceite muy caliente para que quede muy crujiente.
Servimos con orégano.
También preparé una ensalada de salmón ahumado y aguacate para tener un relleno más digestivo y fresco.
Picamos todos los ingredientes y mezclamos con la salsa rosa. Podemos añadir unas semillas de sésamo.
Una vez tenemos todos los ingredientes preparados y las patatas en su punto llega la hora de comer.
Rellenamos las patatas con nuestro relleno preferido (o combinando dos) y a disfrutar!

Stew the meat or we use stewed meat leftovers to make the shredded beef. This filling inspired by Mexican cuisine is characteristic of shred the meat with two forks instead of chopping it.
Make a tomato sauce frying and crushing the onion, the pepper and the tomato and add salt and chile to taste.
One of my favorite restaurants when I was in Ireland was the Apache pizza in Cork, I loved the "cheesy garlic chips", so since then I often do this combination at home. For the jacket potatoes I mixed the aioli with the melted cheeses and prepared American style crunchy onion.
Chopped the onion and passed it for flour. Using a strainer remove the excess of flour and fry in very hot oil so that it is very crunchy.
Serve with oregano.
I also prepared a smoked salmon and avocado salad to have a more digestive and fresh filling.
Chop all the ingredients and mix with the pink sauce. We can add some sesame seeds.
Once we have all the ingredients prepared and the potatoes at their point it comes the time to eat.
Fill the potatoes with our favorite filling (or combining two) and enjoy!
